“Hominy is non-negotiable. Poach chicken thighs with a jar of tomatillos, blend half your poblano with cilantro, leave the rest chunky. Simmer till the kitchen smells like a welcome mat. Lime at the table — not before — and don’t skip radish; crunch is hospitality.”
I cheated with rotisserie chicken once; Rita telepathically knew and I started over. The second batch earned a text: “THAT’S THE SPIRIT.”
Carl’s verdict: Five stars. It’s the pozole that makes strangers ask for your Wi-Fi password — then stay for seconds. I added a spoon of mesquite honey in the broth; Rita called it “a diplomatic garnish.”
